The History of Freed's Bakery

Founded in 1959 by Milton and Esther Fried, Freed’s Bakery has been serving the highest-quality cakes and baked goods in Las Vegas to locals and visitors alike!  After nearly fifty years, we pride ourselves on continuing to be family owned and operated.  We have third generation family members ensuring the continued success of our bakery, and we continue to offer the same delicious products along with the excellent customer service that our customers have come to know and love. 

2008 has been an exciting year for Freed’s Bakery.  Our staff has grown to over 45 dedicated people, including employees who have been with us for over 25 years.  We have seven full time cake designers, and we opened our second location (in the Silverado Ranch area) in September of 2007.  

Our repuation has also grown!  Freed’s Bakery has been featured on such shows as The Food Network’s “Roker on the Road,” “$40 a Day with Rachael Ray,” “Sugar Rush,” and “After Midnight.”  Freed’s has appeared on Lifetime’s “Top This Party,” Hawaiian Airlines’ “The Best of Las Vegas,” and “Las Vegas Live.”  Freed’s has also been featured in Bon Appétit, Martha Stewart Weddings, People’s Amazing Real Life Weddings, Neiman Marcus Entrée Magazine, Conde Nast Traveler, and the New York Times Food Section feature on wedding cake designers.  Freed’s has been voted Best of Las Vegas by the Las Vegas Review Journal’s Reader’s Choice for the last 27 years, including our most recent win in 2008, and has been recognized by AOL City’s Best and The Knot’s Best of Weddings 2007 and 2008.

~ 1959 ~
The Start of it All!

Milton and Esther Fried open a snack bar at Panorama Market in Las Vegas. They sell a few baked goods, including donuts and danish.  The demand becomes so huge that they start to add a few other items to sell at the snack bar. They begin to purchase baked goods from other bakeries, and sell them at their location.  Within a few months they have a full-fledged bakery right next to the snack bar.

Expansion!

Within one year, Milton and Esther open a production plant along with two other sales outlets in the Las Vegas area.  They find master bakers from all over the world to create the same delicious recipes that we use to this day.  Within another year, they have two production plants and another five sales outlets.  By 1965, Milton and Esther are quite busy managing their five children, their two production plants, and the seven sales outlets!  Not to mention Milton’s job as a local musician (playing with all the greats!)

Milton and Esther hear about a beautiful, modern, independently operated market called the Boulevard Market, inside of the Boulevard Mall.  They decide to sell all of their production plants and sales outlets, and focus on creating one fantastic bakery at the Boulevard Market.  The move is well worth it – this location remains in the memories of some of our most loyal customers to this day!

~ 1980 – 2006 ~
The Next Chapter!

After twelve wonderful years, The Boulevard Market closes and Milton and Esther open their first completely independent bakery. The Tropicana and Eastern location (which is still open!) has great space for baking, counter sales, and eventually, for Wedding Cake Consultants to work their magic!  

While always well-known in Las Vegas, the bakery begins to broaden its reputation through the help of various television programs.  Features on Food Network programs such as “$40 A Day with Rachael Ray”, “Food Finds”, “Roker on the Road”, “After Midnight”, and “Sugar Rush”, in addition to shows on networks and local press all help solidify Freed’s Bakery as the best bakery in Las Vegas.

And Beyond!


July 7, 2007 is a milestone for Freed’s Bakery and the City of Las Vegas.  Las Vegas has over 3,000 weddings in 24 hours (in honor of the lucky 07/07/07 date), and Freed’s Bakery produces 240 wedding cakes and delivers 100 of them within 12 hours.  

In September of 2007, Freed's Bakery expands to a second location in the Silverado Ranch area.  The new bakery (located at Eastern and Richmar) features a beautiful counter area downstairs, and a wonderful cake gallery upstairs, where our Cake Consultants are available to help customers choose the cakes of their dreams.  

After nearly 50 years, Freed's Bakery remains family owned and operated.  Joni Fried, one of Milton and Esther's daughters, now owns the bakery, and Max Fried, one of Milton and Esther's grandsons, helps manage it.  Not to mention the other family members who love working the counter at Christmas!  We pride ourselves in carrying on the family tradition of quality product and service, and thank every one of our customers who have helped make Freed's a success.
